Oxi–Pacamara Blend

Grown in the volcanic highlands of Boquete at 1,500 meters above sea level, this rare Oxi–Pacamara blend combines the large-bean genetics of Pacamara with the vibrant clarity of the Oxi process. The result is a cup defined by layered sweetness, floral aromatics, and a depth that reflects the unique terroir of Panama’s most celebrated coffee region.

Oxi (Oxygenated Fermentation)

The Oxi process is a controlled oxygenated fermentation method that enhances the coffee’s complexity and sweetness without overpowering its natural clarity. After picking, cherries are fermented in oxygenated tanks, then dried slowly under Boquete’s mild sun. The result: cleaner acidity, balanced body, and remarkable flavor definition.

Taste the Boquete Highlands

Expect a cup that begins with butterscotch sweetness and ripe peach, lifted by a bright pink grapefruit acidity. Its syrupy body gives way to a lingering mango and blood orange finish, both tropical and refreshing.

As the coffee cools, hints of tamarind and lulo-like citrus emerge — a lively transformation that captures the depth and vibrancy of Boquete’s volcanic terroir.

It began as a small family farm that has been guided by patience, precision, and a deep respect for the rhythm of the land. Her hands-on approach ensures that every cherry is selected at its peak, preserving the balance between nature and craftsmanship.

Nestled in the lush highlands of Boquete, Giovanna’s estate sits between 1,500 and 1,600 meters above sea level, where volcanic soil and misty mountain air create one of the world’s most sought-after coffee terroirs. It’s here, in this fertile valley, that her passion for cultivating distinctive, expressive coffees took root.

Her philosophy is simple: great coffee is grown, not made. Giovanna focuses on soil health and selective picking to highlight the natural sweetness and clarity of Boquete’s high-altitude beans. The result is a coffee that tells the story of its land with honesty and elegance.
