Milenio is an F1 hybrid variety known for bringing together resilience, productivity, and strong cup potential. In Carlos Fuentes’ lot, it expresses a sweet and structured profile with bright acidity, warm sugar-like notes, and a clean, balanced finish.

Washed Process

Ripe cherries were selected, depulped, and rested to remove the remaining mucilage, washed clean, and then dried under controlled conditions. This method is commonly used to highlight clarity, acidity, and precision in the cup.

Selection

Only ripe cherries are selected before depulping, reducing the presence of underdeveloped or overripe fruit and helping preserve a cleaner final profile.

Drying

After washing, the coffee was dried carefully until it reacheed a stable moisture level.

Process Intent

The washed process emphasizes transparency and balance. For this Milenio, it would highlight the coffee’s citrus acidity, clean sweetness, almond-like structure, and delicate floral character.

Carlos Fuentes carries forward the legacy of Café Alcabú, a family coffee project with roots dating back to 1940. For more than 80 years, the Fuentes Rodríguez family has remained connected to coffee production in Chiriquí, preserving a tradition built on quality, respect for the land, and commitment to their community. What began as a family farm has evolved across generations — from producing coffee cherry to processing parchment, green coffee, roasted coffee, and eventually building the Alcabú brand. Today, Carlos represents that continuity: a producer shaped by tradition, but focused on improving quality through careful processing, sustainability, and long-term vision.

This Milenio comes from Alcabú Coffee Estate in Río Sereno, Chiriquí. A family farm founded in 1940 and sustained through several generations of coffee producers. The farm began with 7 hectares and has grown to 16.5 hectares as new generations of the family joined the work. Its coffee reflects the character of the land where it grows: a highland environment shaped by climate, soil, and decades of agricultural knowledge passed from one generation to the next.
