Grading

ET47 Honey

ET-47 is a rare specialty variety valued for its complexity, clarity, and distinctive flavor expression. In this honey lot from Ponderosa Coffee Estate, it delivers a refined balance of panela-like sweetness, citrus brightness, caramel depth, and a smooth, structured body.

Origin

Ponderosa micro-lot at Cordillera, Chiriquí, on the slopes of the Barú Volcano.

Altitude

1,325 MASL.

Microclimate

Ponderosa benefits from sun, rain, altitude, and slightly shifting temperatures, along with seasonal trade winds and Pacific breezes. These conditions create a balanced growing environment for producing expressive and distinctive coffees.

Honey

This ET-47 was washed on the same day as harvest to remove floaters, then hand selected to remove green or overripe cherries. After depulping, the coffee was dried carefully to preserve sweetness, body, and clarity.

Selection

The cherries were hand selected before processing, helping ensure that only quality fruit entered the lot. This step supports a cleaner cup and greater consistency in the final roast.

Drying

After depulping, the coffee was set out to dry on African beds. Drying was finished in a humidity-controlled dark room, allowing for a more stable and controlled final stage.

Process Intent

This process is designed to highlight the ET-47’s sweetness and body while keeping the cup clean and approachable. The result is a balanced profile with citrus brightness, caramelized sweetness, and a rounded structure.

Omni-roast

The roast profile is developed as an omni-roast, giving the coffee enough versatility to perform well across multiple brew methods.

Roast level

Omni-roast.

Roast Intent

The goal is to preserve the coffee’s citrus clarity and panela-like sweetness while developing a smooth, balanced body.

Brew intent

From filtered to espresso.

87.25 points

The cup presents notes of panela, light floral character, citrus, caramel, and grapefruit. It is sweet, structured, and approachable, with a clean profile and a strong body.

Origin

Ponderosa Coffee Estate, Cordillera, Panama

Ponderosa Coffee Estate is located on the slopes of the Barú Volcano, between 1,300 and 1,700 meters above sea level. The farm faces the Pacific Ocean and is surrounded by mountains and native rainforest, which covers around 60% of the property. This combination of altitude, rainfall, sunlight, forest, and Pacific influence creates balanced growing conditions for producing exclusive, high-quality coffees from one of Chiriquí’s most promising coffee regions.
Process

Philosophy & Craft

At Ponderosa Coffee Estate, process begins with care, for the coffee, the land, and the people behind each harvest. The estate works closely with families from the indigenous community, many of whom have been part of the farm for more than 13 years. Their approach is rooted in communication, mutual respect, and careful execution.
